Trüffelnudeln mit Tartufata

Zutaten:
250g Trüffelnudeln
60g Butter
200ml Sahne
70g geriebener Parmesan
30g Tartufata (ganzes Glas)
4 EL Trüffel-Öl
Salz & Pfeffer 

Zubereitung:
4 Liter Wasser zum kochen bringen. 2 ½ Esslöffel Salz hinzufügen und die Nudeln 7 Minuten lang bissfest garen.

Die Butter in der Pfanne langsam schmelzen lassen. Sahne hinzufügen und mit dem Schneebesen gut durchrühren - etwas Salz und Pfeffer hinzufügen.

Sahnegemisch etwas einkochen lassen, geriebenen Parmesan hinzufügen und anschließend das Tartufata einrühren. Zum Schluss 4 Esslöffel Trüffel-Öl unterrühren.

Die abgetropften Nudeln mit etwas Nudelwasser hinzugeben (um die Bindung zu erhöhen), aufkochen lassen und vorsichtig vermengen. Auf die Teller verteilen. Eventuell mit Frühlingszwiebeln oder Parmesanspänen dekorieren.
